Parry's Agave
Agave parryi
A tidy, ice-blue rosette of broad spine-tipped leaves that, after decades, sends up a towering candelabra of yellow flowers and then dies, leaving offsets. Supremely cold-hardy for an agave. Like other agaves, the sweet heart is traditionally slow-baked into a staple food, and the sap taps into syrup or ferments into mescal.
